Zucchini Basil Soup


 

 Ingredients 

 

 

4 cups thinly sliced zucchini

1 medium onion, chopped

3 tablespoons butter

4 cups vegetable soup, preferably homemade

1 tablespoon finely chopped fresh basil

3 tablespoons fresh lemon juice

½ cup freshly-grated parmesan, optional

salt and pepper to taste

 

 

 Preparation

 

 

In a large saucepan, sauté chopped onion in butter until soft and translucent. Add zucchini, cover and simmer for 30 minutes.

Add the rest of the ingredients, and purée right in the pot using an immersion blender. If  you are using a tabletop blender, be sure to cool soup slightly before blending).

Heat to simmering and serve. Yield: 4  servings.

 

 

 

 Supa Crema de Zucchini cu Busuioc 

 

 

 Ingrediente

 

1 ceapa medie tocat

4 cani zucchini taiat cubulete

3 linguri unt

4 cani supa de legume

1 lingura busuioc proaspat tocat

3 linguri de suc proaspat de lamaie

1/2 ceasca parmezan ras (optional)

sare si piper dupa gust

 

 

 Preparare

 

 

Caleste ceapa in untul topitpana se rumeneste putin.

Adauga supa de legume si cubuletele de zucchini.

Acopera vasul cu un capac si fierbe timp de 30 de minute

Adauga restul ingredientelor si mixeaza-le bine.

 

Se serveste calda cu crutoane sau cu branza rasa chedar!
